Ingredients

For 1–2 servings

  • 1 large cucumber
  • 1–2 cloves garlic (finely minced)
  • 1–1½ tbsp light soy sauce
  • 1 tbsp vinegar
  • ½ tsp sugar
  • ½ tsp sesame oil
  • (Optional) chili oil, e.g., Lao Gan Ma, to taste
  • (Optional) 1 small packet spicy konjac strips (Chinese snack, e.g., from Weilong)
  • (Optional) sesame seeds
  • (Optional) finely chopped spring onion

Step-by-step

STEP 1
Wash the cucumber, cut off the ends. Lightly press with the flat side of a knife or a rolling pin until it cracks open, then cut into bite-sized pieces.

STEP 2
Remove konjac strips (optional) from packaging and add directly to the bowl with the cucumber.

STEP 3
Add garlic, soy sauce, vinegar, sugar, and sesame oil.

STEP 4
Mix everything well until the ingredients are evenly coated with the dressing.

STEP 5
Optionally stir in chili oil. Sprinkle with sesame seeds or spring onions and serve.
