This Mae Ploy curry paste is an excellent base for authentic yellow Thai curry. With lemongrass, garlic, and galangal, it is fragrant and has a beautiful light yellow color thanks to turmeric. Yellow Thai curry paste is milder than red and green curries, as the main ingredient is garlic rather than chili.

The yellow curry paste can be used directly as a seasoning. For a yellow curry, fry 2-3 tablespoons of the paste in a little oil, add 400ml of coconut milk and bring to a boil. Add meat, potatoes and vegetables as desired and cook until everything is thoroughly cooked.
