Thousand-year-old eggs or hundred-year-old eggs (皮蛋 pidan) are a Chinese delicacy that has been fermented in a long process. For Westerners, it takes some getting used to eating them, because the eye eats first, as the saying goes. This is not necessarily the case with the almost translucent dark egg white and the yellowish-green yolk. The latter can be hard or semi-soft depending on the variety, which doesn't make it more appealing. Once you've overcome your initial hesitation and don't mind the slightly chemical smell, thousand-year-old eggs are a delicacy. They usually taste slightly salty, somewhat indefinable, but delicious!
