Rezept für Kimbap - Korea's Popular Rice Roll


Ingredients

For approx. 4–5 rolls

  • 300 g sushi rice
  • 375 g water
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • a pinch of salt
  • Carrot strips (sautéed until soft in a little butter)
  • Baby spinach (cooked until soft in a little butter)
  • Pickled daikon radish, sliced
  • Omelet made from 4 eggs, cut into strips
  • Pan-fried Leberkäse
  • Nori sheets
  • Sesame seeds
  • (Optional) Bamboo rolling mat

Step-by-step

STEP 1
Wash the sushi rice 3–4 times, place it in a pot with 375 g of water and a pinch of salt, and bring to a boil over high heat. Then let it simmer on low heat (e.g., setting 3 out of 9) for approx. 20 minutes, stirring occasionally.

STEP 2
Mix rice vinegar and sesame oil into the cooked rice.

STEP 3
Lay out the nori sheets and spread the sushi rice thinly on top.

STEP 4
Place the omelet strips first in the lower third of the nori sheet.

STEP 5
Follow with Leberkäse strips, carrots, spinach, and daikon radish strips.

STEP 6
Roll everything tightly into a roll – ideally with a bamboo mat, but it also works without one.

STEP 7
Brush the roll with a little oil, sprinkle with sesame seeds, and cut into individual rolls as desired.
