Rezept für Winter summer rolls


Ingredients

For 4 servings

  • 1/4 red cabbage
  • 1/2 Hokkaido pumpkin
  • 2 handfuls of arugula
  • 2 sprigs of fresh mint
  • 100g glass noodles
  • 8 sheets of large rice paper
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp peanut butter
  • 1 splash of lime juice
  • Sriracha to taste


step by step

STEP 1
Wash the pumpkin, remove the seeds and cut into rough cubes (2cm).

STEP 2
Mix the pumpkin with 1 tablespoon of soy sauce and 1 tablespoon of sesame oil and bake in the oven at 180 degrees top/bottom heat for 15-20 minutes

STEP 3
In the meantime, prepare glass noodles according to the package instructions

STEP 4
Cut red cabbage into fine strips

STEP 5
Wash the mint and rocket and pick off the mint leaves

STEP 6
When all the ingredients are prepared, dip 1 sheet of rice paper into water, cover with the ingredients and roll up

STEP 7
For the dip, combine peanut butter, 1 tablespoon soy sauce, lime juice and Sriracha; If necessary, add a little more water to make the dip more liquid
